While I can't pretend to be a real pro, here's an arrangement I've used for many years. The blade is broken in the normal manner and then captured between two strips of .040 basswood epoxied together. The whole assembly is 6 inches long. When it dulls, a few passes across a hard Arkansas stone lubricated with Castrol Syntex brings it back to new condition. I never thought about thickness until I read this thread, but it turns out to be .007 or thereabouts. Nice and stiff, goes where I want it to, and I only cut with the point anyway, which I suppose is around .00000.
The .070 wide strip in the photo is hard .035 balsa, which took a few passes to get through, but didn't bust up.
