Hi Joshua.

 I may under some circumstances use incidence on the wing, but typically try to use near zero.
 Down thrust also isn't evil, but isn't great either. I typically try to set up the models with zero/zero.
 Occasionally left thrust is required though when excessive stab tilt is required to turn.
 

 The rest makes sense and is how I typically try to set things up. I think the big secret is to use thicker wood for the motorstick to reduce the twist.
