Mike,

 Please take my suggestions with a grain of salt. I'm only making educated guesses here.
 

 - I think we will use proportionally the same thickness motor, with the same prop. So a 9" motor becomes 6". I would aim for a motor stick of ~7" and a hook-to-hook distance of ~6". With the same cross-section motor, launch torque will be the same as before.
 - I would use the same or slightly thinner (than before) wood for the motor stick. Why? In order to have an equivalent amount of wing twist at launch. With the tail hook ending somewhere in the middle of the wing chord, the wing twisting force will be small. We need some amount of wing twist at launch to fight the rubber torque.
 - For the stub, I would make sure that the first 3 inches is extremely stiff. I don't know what's needed. As I mentioned, I am going to re-use my 10.25" motor stick and move up the tailhook.
 

 I think fighting launch torque may be the biggest problems we need to overcome.
