I said 3 revolutions because most watches with a stroke rate function use a
formula that requires 3 strokes or prop rotations to calculate the RPM.
Yes you can do it yourself with a regular stopwatch and a calculator, but
it's not as convenient.
Regarding all the stuff John mentioned, it will do all that as long as
you're checking the RPM throughout the flight. It doesn't do it all at the
same time.
Converting to rev/sec is just a matter of dividing by 60, but I'm not sure
how that's better.
