Agreed, one can't sand off lumps from wood without potentially ruining it. However the cutting board material seems to be more tolerant. I also use a knife or similar to remove lumps.

Bob, I picked up an old woodworkers bench with a laminated maple top,
probably similar to yours but a real antique with wooden vises. I try
not to sand the top as it will eventually make it "ripply". I clean off
glue blobs with a really sharp chisel by just sliding along the
surface. For pinning I use sheets cut to size from "blue insulation
foam" 2" thick.
