Well oil canning might be actually good if it happens and un-happens at the right time. It would be really difficult to plan for something like that I think.
I'm having a problem with my new catapult glider that may be due to that problem. I'm getting a hard roll to the left regardless of what I do trimwise. It may be the left wing is twisting or bending and popping up the flap under launch load.

I agree as a wing flexes(spanwise)it straightens
out the flaps. So depending on the stiffness of the
wing in the spanwise direction, this effect also
contribution to the straightening of the flaps. This
is good point and something one needs to pay attention
to when building a flapper. My experience is that it
is bad if when flexing the wings (spanwise) the flaps
pop up suddenly(I refer to this as oil canning,
because it is like what happens when you push on the
bottom of a oil can dispensor, it is actually a
buckling instability issue.) A gradual straighten of
the flaps while flexing the wings spanwise is good.
Are your observations in agreement with what I just
described?
