CG and wing placement question

Hello,
OK, Rookie in learning mode:
I have a question about positioning the wing on my models. After
reading Ron Williams book about positioning the wing on my EZB, I am
very confused. Ron talks about finding the center of mass of the
complete plane without the wing installed and then locating the TE 7/8"
behind this point, and the LE 2 1/8" in-front of this point.

Easy enough, but when I compare the results to other plans I see, it
looks like the wing is positioned way too far back. Many plans show
the CG located behind the TE.

I can make the plane fly OK with the wing positioned almost anywhere
along the motor-stick by fiddling with the incidences of the wing and
stabilizer. However, there must be an optimum position for the best
efficiency. How do I determine that? Any thoughts would be great.
