Lakehurst is available every weekend to fly. I would however recommend against going on Memorial Day. The air is typically not good until mid June and gets really good (depending on the weather) in July through September. If you are dead set on going though, I would book everything to be refundable/cancel-able and make a decision the week of. By postponing your trip to later in the year you're more likely to get good weather, which is characterized by at least 80 F, sunny, and winds below 10 mph.
