Nathan Chronister has a sizeable website on ornithopters (ornithopter dot org) and sells some kits that should be good for high school students to get started.
 

 There was some research done at Harvard some years ago on a wing joint design. The mechanism was clever, but the project was only at the stage of demonstrating the validity of the joint and not three-dimensional stability. The working model rode up and down two vertical wires to demonstrate that the wind did lift.
