Are you stripping 3" wide sheets? Unless they are from a huge tree, they will show variations in density, since they can cover several seasons of growth. Indoor wood that is only 1.25" wide will have pretty consistent density across the sheet, because of both the smaller width and the careful selection by the wood cutter.
