I have been building on a sheet of steel on the top of a workbench made out
of a door. The door is flat and I attach things to the steel (duct covers
from Home Depot) using small magnets. Magnets to either side of a spar hold
it in place. If I need to hold something down, I'll use a piece of scrap
balsa to actually hold the item down with a magnet off to the side, similar
to what some folks do with pins. You can use Sharpie markers to mark on the
metal. If you need it a piece of wax paper goes on top and you can see the
marks under it.
