Still learning about triming ...

I have a dime scale "Midget Rocket" and a "Phantom Flash" that both do
the same thing.
When I first release the models at full power, the airplanse fly with a
nice stable upward flight but as the motor runs down the airplane
begins oscillating, going up to a stall then diving and recovering over
and over. The Phantom Flash was doing smaller oscillations than the
Midget rocket. On the Phantom Flash I gradually gave it down thrust
till it refused to climb, and moved the wing back in various positions
till it would barely glide. On the Midget rocket I gave it lots and
lots of down thrust and down elevator so much that it would hardly
glide, and it still is oscillating up and down.
What causes this? What do I need to be doing differently?
